I don't know why, but recently Rainbow Cheese Cake become something 'booming' in my town. I'm not too interest with it because I've heard about that a few months ago. In fact, Rainbow cheese cake is just an usual cheese cake. But I know, it's appearance is sooo colorful. so, I want to show you how to make it in your own kitchen ^_^
You Will Need:
- baking dish with 25 cm of diameters
- cake ingredients
- low-protein flour 72 gr
- granulated sugar 65 gr
- butter 75 gr (melt it)
- egg yolks 4
- egg whites 4 (stir it until stiff and fluffy "Meringue")
- Vanilla Extract
- food coloring (red, blue, yellow, purple, green, etc)
- Simple Syrup
- Air 200 ml
- sugar 100 gr
- Cover/Frosting
- Cheese cream 125 gr
- powdered sugar 80 gr
- Whipped cream 250 ml
- strawberry jam / fruit jam 100 gr
- Cheese cream 125 gr
How to Make Rainbow Cake Recipe
- Prepare the oven to 180-190 degrees. Grease a baking dish with butter.
- Egg yolks, sugar, vanilla extract, beat them until fluffy, Use a mixer, increase the mixer speed gradually to have more stable dough. Whisk until it changes color to white, and the sugar dissolves. Then put 1 teaspoon of food coloring.
- Lower the mixer speed to low, pour the melted butter.
- Then stir the material using a spatula, add meringue (whipped egg whites until stiff in), alternating with flour.
- Bake for 30-35 minutes, with the fire up and below.
- Once cooked, remove from mold. Wait until it getting cold.
- Do the same for the other colors.
- For the contents: mash the cheese cream with mixer until smooth, then enter the jam.
- Frosting: mash the cream cheese, powdered sugar until smooth and creamy. Then enter the whipped cream, mix well with spatula.
- Place one single layer of each color into every well.
- Before the stuffing, drizzle with a simple syrup topped surface using a brush, its function in order to taste the cake more moist and more integrated with the cheese cream.
- After covering the top. Cover the outside with frosted cheese cream.
- Chill them into refrigerator for 1-2 hours, then it's ready to serve ^_^
